New Recipe!

For our work Christmas Party we were asked to make foods we could snack on. I decided to make the little smokies. I've done them several different ways, but wanted to try something new (and make something that would feed the entire office). 

Brown Sugar BBQ Sauce
Grape Jelly 
Chili Sauce
2 Cocktail Smokies
1 Bag Meatballs

It said you could cook all of it on the stove for 30 min (to make the sauce think) or just but it on high for 4 hours. I went for the latter. This was a big hit at work! They ate almost all of it up!

Pinterest Recipe

Pizza Grilled Cheese

I got this meal idea off Pinterest. It's pretty much just a doctored grilled cheese, but I was easy and quick to make. And only 6 WW Plus Points

Ingredients:

2 slices Healthy Life bread (or your favorite gluten-free bread)
1 tbsp Smart Balance light butter
1 Kraft fat free mozzarella cheese slice (or mozzarella flavored Soy cheese)
6 turkey pepperoni slices
2 tbsp Prego Light Smart Italian marinara sauce

Directions:

1. Heat a non-stick skillet over medium heat.
2. Spread 1/2 tbsp butter on each slice of bread. 
3. Place one slice of bread butter side down on skillet.  Place cheese slice and pepperoni slices on non-buttered side. Add second piece of bread on top, butter side up.
4. Flip when golden brown and toast the other side.
5. When other side is golden brown and cheese is melted, transfer to plate. Cut in half. 
6. Serve with side of marinara to dip in.

New Soup Recipe!

Tonight I made Chicken Taco Soup! I kind of created a recipe from several that I had looked at and some ingredients that I already had. Here's the recipe:

* Rotisserie Chicken (tip: get all the chicken off when it's still hot)
* 2 cans corn
* 2 cans low sodium black beans
* 32 oz. Low Sodium Chicken Broth
* Tomato Paste (I found the Ro-Tel Tomato Paste for extra spice)
* 8oz. Reduced fat Cream Cheese   
* 1 cup Reduced fat Sour Cream
* Packet of Taco seasoning
* Packet Ranch Dressig
* Cheese (for topping)
* Fritos (for topping)

I put all of in the Crock-Pot on low for about 7 hours, adding the creamy ingredients last. This made lots of soup, enough for me to make 8 lunch size meals out of it!!

New Recipe!

Here is another Pinterest idea! Candice was here for a long weekend. We usually go out to eat while she is here, but we decided to stay in for a few meals. Can and I were looking for new recipes to try and came across this one!

Chicken Roll Ups
1 pkg cream cheese
1 pkg crescent rools
1.5 C grated chedder cheese
1 C grated Montery Jack cheese
1/4 t salt
1/4 t pepper
bread crumbs
1/4 sick melted butter

Combine chicken, cheeses, salt and pepper. Spoon onto crescents. Roll them up making sure they are sealed around the chicken mixture. Brush tops with butter and sprinkle with bread crumbs. Bake at 350 for 20-25 minutes. To reheat, just place in a 325 degree oven for 15 minutes.

We decided against the bread crumbs. (it felt a little weird putting bread on bread) So we decided to add garlic powder instead. Can had it all ready when me and Lou got home from work! It turned out delicious!

Crock-Pot Soup!

Between the cold weather and me spending entirely too much time looking at Pinterest. I decided to make some soup. Warning: It very delicious and unhealthy. I also made a lot! I was able to feed me, Teresa, and Lou dinner. Plus enough leftovers to have lunch for the whole week!

Bacon Cheeseburger Soup!
Ingredients:
1 lb of ground beef
1 container of Philadelphia Cooking Creme ( I used regular creme cheese)
6 slices of bacon
1 bag Ore Ida Hash Browns
1 8 oz. Velveeta cheese
1 32 oz. chicken broth stock
Small onion diced

32 oz. chicken broth stock

Cut and cubed cream cheese and Velveeta

Add in hash browns

Add browned hamburger and cook & crumbled bacon

Ready for cooking!

The directions said to cook it for 4-5 hours on high.
I had a problem with it sticking. So I would recommend cooking it on low for longer and
stirring it very often.

Soup is ready to eat!

I added a little cheese and some French's fired onion on top!
