One of the items on my 30 before 30 list is to make a 5 course meal. So in search of something to do for Momma's birthday, Teresa and I decided it would be fun to make the meal for her. Thanks to Pinterest, I came up with a great menu. This was a huge undertaking, but I had lots of fun making it.

Here are the recipes I used:
Tortellini Soup
Ingredients:
1 15 oz can vegetable broth
1 tablespoon minced onion
1 minced garlic clove
Pinch red pepper flakes
1-1/2 cup uncooked tortellini
5-6 basil leaves
Directions:
In a small pot, saute the onion, garlic and red pepper flakes for about 2 minutes, or until the onion is softened and translucent. Add in the vegetable broth and once it has come to a boil add in the tortellini.
Cook tortellini according to package directions, adding the basil leaves about 30 seconds before fully cooked. Transfer to bowls and serve.
Brown Sugar and Balsamic Glazed Pork Loin
Ingredients:
1 (2 pound) boneless pork tenderloin (or regular pork loin)
1 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed
1/2 cup water
Glaze
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce
1 (2 pound) boneless pork tenderloin (or regular pork loin)
1 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed
1/2 cup water
Glaze
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce
Directions:
Combine sage, salt, pepper and garlic. Rub over
roast. Place in slow cooker with 1/2 cup water. Cook on low for 6-8 hours.
About 1 hour before roast is done, combine ingredients for glaze in small sauce
pan. Heat and stir until mixture thickens. Brush roast with glaze 2 or 3 times
during the last hour of cooking. Serve with remaining glaze on the side.
Roasted Parmesan Green Beans
Ingredients:
12 oz green beans, trimmed (make sure they are dry)
2 tsp olive oil
kosher salt + fresh cracked pepper to taste
1/4 tsp garlic powder
1 1/2 tbsp shredded parmesan
Directions:
Preheat the oven to 425°F. Line a baking sheet with aluminum for easy clean-up.
Lay green beans out on the baking sheet and drizzle oil over them. Season with salt, pepper and garlic powder and toss to evenly coat.
Spread them out on the sheet so that they all lay flat and place on the lower third section of your oven. Bake 10 minutes, shake the pan to turn; bake 5 additional minutes. Remove from the oven and sprinkle with grated cheese.

baby potatoes
2-3 tbsp soy sauce
2 tsp butter
2 tsp olive oil
Fresh cracked black pepper
2-3 tbsp fresh parsley, chopped (divided)

Preheat oven to 350 degrees. Boil a large pot of water and boil the potatoes for 4-5 minutes. Remove from water and let cool. Once cooled, slice in half and combine soy sauce, butter, olive oil, black pepper and 1/2 of the parsley. Mix thoroughly and place in a baking dish that has been sprayed with olive oil cooking spray. Place in oven and roast for 20-25 minutes. Remove from oven and taste, re season with sea salt and cracked pepper if needed. Enjoy.
